Ginger Lemon Zinger

1 cup ginger juice, approximately 1 – 1 ½ pounds of ginger
1 ½ cups freshly squeezed lemon juice, about eight lemons
1 cup honey
6 cups cold water
Instructions:
1. 1. Scrub the ginger with a vegetable brush or toothbrush and rinse under water until clean. Repeat as needed. (Peeling the ginger is optional.)
2. Peel the lemons.
3. Using an electric juicer, juice the ginger, then pour through a fine mesh strainer. Set aside.
4. Juice the lemons.
5. Add the ginger juice, lemon juice, and honey to a pitcher, and stir well until the honey dissolves.
6. Add six cups of cold water and stir gently.
7. Refrigerate until chilled and enjoy as a wellness shot or serve over ice.
8. Store in airtight containers for up to five days in the refrigerator.
